Grind freshly tender coconut in a blender along with sugar, and set it aside. In a saucepan, add agar-agar powder or gelatin, whisk until evenly mixed, bring to a boil, then add the coconut mix. Now pour coconut milk and whisk until it thickens. Transfer to a baking mold and set it aside in the refrigerator for 2-3 hours, and consume.
You can use gelatin or agar agar powder, or even cornstarch in order to make the pudding structure stable, without ever needing to add eggs into the mixture.
