Cream Filled Croissant

Prepare homemade croissant dough and laminate to form butter layers, shape croissants, and bake to be crispy. After cooling, fill them with whipped or pastry cream and top with icing sugar.

Eggless Cream Filled Croissants require eggless laminated dough and an eggless cream filling made with fresh cream, sugar, vanilla, and custard powder made with cornflour. Do not use an egg wash; brush croissants with milk before baking.

To prepare croissants without an oven, use a thick pan with a tight-fitting lid to bake them over low heat until evenly baked. Cool them off and only then add the cream. Putting cream into warm pastries will make them lose their crispy texture.

The croissants become too soft due to poor lamination and proofing, or if the cream is added to warm croissants. Too much filling will also make the pastry soft.

Cut the croissants in half and fill them with strawberries, blueberries, caramel or chocolate sauce, chocolate shavings, or chopped pistachios. You can also use mini croissants to decorate the dessert table.

Couverture chocolate or dark chocolate will create a contrast with the cream filling. Milk chocolate will make the pastry sweeter and creamier. Couverture chocolate can be easily melted.
