The best part about this recipe is it’s no-bake, aside from that, it just needs a bowl, a baking sheet and parchment paper and that’s just it. No-Bake Coconut Balls with Raisins and White Chocolate Drizzle

Ingredients
- 2 cups shredded coconut
- 1 cup almond flour
- 2 limes, juiced and zested
- 1/2 cup honey
- 1 cup white chocolate chips or cooking white chocolate
- 1 tsp coconut oil, optional
- 1/2 cup raisins
Instructions
- Pick a mid-sized bowl, add the shredded coconut, almond flour, lime juice, and honey into it. Mix with a spoon or your fingers until combined evenly.
- Take a baking sheet, layer with a sheet of parchment paper. Scoop up 2 tablespoons of the coconut mix and roll into balls. Arrange them on the lined baking sheet.

- More Ingredients: Since raisins are already in the mix, think of adding nuts into the coconut balls too. Like chopped almonds, pistachios, walnuts for a nice crunch and pop of nutty flavor. You can also swap the raisins for other chopped dry fruits or just add them to the mix. Think of dried cherries, cranberries, cherries or apricots.
