Simmer full-fat milk in a wide pan, constantly scraping and folding the cream that forms on the top in, until thick and reduced considerably. Add sugar to the mixture and add cardamom, saffron, and chopped nuts for flavor.
Rabri is naturally eggless, made by reducing milk with sugar and folding in the malai, or cream layer, that forms during the simmering process. This classic dairy dessert is made without eggs.
No oven required. The whole cooking process is done on the stovetop for rabri. The cream is continually returned to the milk, which is simmered in a wide, heavy-bottomed pan until the mixture thickens naturally.
Rabri needs just whole milk, sugar, and flavorings like saffron strands, cardamom powder, and chopped pistachios or almonds. To speed the reduction, some recipes add a little condensed milk or rose water.
Homemade rabri is preservative-free and stays good for two to three days when kept in an airtight container in the refrigerator. Always serve chilled or reheat gently; never leave at room temperature.
If the stirring is not sufficient, the milk will burn at the bottom of the pan and give the Rabri a burnt aftertaste. A grainy, uneven texture usually comes from rushing reduction on high heat.
The store-bought ones usually contain condensed or powdered milk for convenience, which means they are less complex and have a more uniform taste. The homemade rabri has a richer taste, with the sweetness adjustable and no added preservatives.
For a modern and fresh take on this traditional dessert, opt for a layered Rabri falooda with vermicelli, basil seeds, and ice cream; saffron rose Rabri with more floral notes; or mango Rabri with fresh pulp.
A light milk chocolate shaving or drizzle can add to Rabri's creamy sweetness without overwhelming it, but many people prefer to keep this dessert chocolate-free, letting the milk, cardamom, and saffron flavors remain the stars.
A smooth, good-quality milk chocolate brand can be used as garnish. Rabri is generally judged by the quality of the fresh, full-fat milk used and not any packaged brand or ingredient.
