Ingredients:

- 1 cup rolled oats
- ¾ cup all-purpose flour
- ½ tsp baking soda
- ¼ tsp baking powder
- ¼ tsp salt
- ½ tsp cinnamon
- ½ cup unsalted butter, softened
- ½ cup brown sugar (or jaggery powder)
- ¼ cup white sugar
- 1 egg (or 3 tbsp curd/flax egg for eggless)
- 1 tsp vanilla extract
- ½ cup raisins soaked in warm water for 10 mins and drained
- 6–8 Oreo cookies, crushed into chunks
- ¼ cup chocolate chips
- 2 tbsp chopped walnuts or cashews
Method:
Step 1: Preheat & Line
Preheat the oven to 175°C. Prepare a baking tray by lining it with parchment paper or greasing it with butter.
Step 2: Mix Dry
Take a mixing bowl and in it combine flour, oats, baking soda, baking powder, salt, and cinnamon powder. You can add gluten-free flour or whole grain flour for a healthier version.
Step 3: Cream Wet Ingredients
Take a different bowl and beat butter and sugar until it turns creamy. It will take 2 to 3 minutes to turn creamy. Now break eggs and add to this mixture along with vanilla extract and mix well.
Step 4: Combine & Fold
Now add the dry mixture to the wet mixture slowly and stir. Fold in raisins and chunks of Oreo cookies along with chocolate chips until everything is well distributed. Chill the dough for about 15 to 20 minutes to make thick cookies.
Step 5: Scoop & Bake
Scoop the dough balls on the lined tray and leave some space in between the cookies. Bake it for 10 to 12 minutes until the edges start to brown. If you want the cookies to be soft, remove them from the oven after 10 minutes or if you want them crispier, bake for up to 12 to 13 minutes.
Step 6: Serve
Serve the Oreo chip oatmeal raisin cookies with coffee and enjoy.
Baking Tips:

- If the consistency of the dough is not firm, the cookies will be flat and not gooey and chunky. For this, you have to let the dough chill for a little longer in the fridge to make it become firm. Overmixing butter will also ruin the texture therefore mix butter only until it is well distributed.
- Cookies will become hard if you cook it for longer. Therefore reduce the baking time a little and let the cookies bake in their own heat after taking them out of the oven. You can also add 1 tablespoon of butter and more soaked raisins to make the cookies soft.
- If the dough is too sticky, add 1 tablespoon of flour and blend well then let it chill to make it firm.
Serving & Storage:

- Let cookies cool on the tray for 5 mins, then transfer to the rack.
- Store in an airtight container for up to 5 days. In this way, the cookies will stay moist.
- Freeze cookie dough balls to bake fresh anytime.
