Directions

In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.

In a separate bowl, beat together the granulated sugar, eggs, milk, vegetable oil, and vanilla essence until smooth.

Gradually add the wet mixture to the dry ingredients, mixing until well combined.

Pour the batter into the prepared cake tin and bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool completely, then slice it horizontally into two even layers.

Let the vanilla ice cream sit at room temperature for 10–15 minutes to soften slightly.

Place one cake layer on a serving dish and spread the softened vanilla ice cream evenly on top.

Place the second cake layer over the ice cream, pressing gently. Freeze for 2–3 hours to set.

To make the ganache, heat butter, heavy cream, and melted Cadbury Bournville chocolate in a saucepan over low heat. Stir continuously until smooth and fully combined.

Stir the mixture for about a minute on low flame, until the chocolate is completely incorporated and the ganache is smooth. Let the ganache cool to room temperature to thicken slightly.

Pour the ganache over the ice cream cake.

Use a spatula to spread it evenly.

Garnish with sprinkles and return the cake to the freezer for 1–2 more hours to firm up. Slice and enjoy.
