- ½ cup refined flour
- 2 tbsp sugar powder
- 2 tbsp milk powder
- 2 tbsp rawa
- ½ cup lukewarm milk
- 2 tbsp Cadbury cocoa powder
- 1 tbsp chopped almonds
- 1 tbsp blanched and chopped pista
- 1 tbsp chopped cashew nuts
- 1 cup sugar syrup (flavored with cardamom and saffron strands)
How to Make Chocolate Malpua
Step-by-Step Instructions

Take a mixing bowl and start by sifting refined flour, Cadbury Cocoa Powder, rawa, milk powder, and powdered sugar. Make sure there are no lumps in the dry ingredients.

Now, slowly add lukewarm milk to the same bowl. Keep whisking the milk and dry ingredients well until there are no lumps and a smooth batter is formed.

Allow the malpua batter to rest for 30 minutes to achieve the perfectly soft and fluffy texture.

Meanwhile, prepare the sugar syrup by heating sugar and water in a saucepan over medium heat. Also, add some crushed green cardamom and saffron strands. Boil the mixture for 5 minutes for a single-string consistency.

Now, place a ring mould in the centre of a pan with hot ghee. Ladle out one portion of the batter into the mould and fry the malpua from one side.

Remove the mould and flip over the malpua and cook it from the other side.
Once the malpuas are fried, soak the fried malpuas in sugar syrup.
Just before serving, garnish with cashew nuts, almonds, and pista and serve.

Focus on batter consistency: To achieve the perfect texture, it is essential to maintain the consistency of the batter. While frying the malpuas, if the batter is too thin, it will break. A thick batter, on the other hand, makes hard and doughy malpuas.
Add a binder for firmness: To make sure the malpua remains firm during frying, add some khoya or cornflour to the batter. This ensures the malpua is not broken when flipped.
Let the batter rest: A resting phase of 30-60 minutes is essential, as it allows the batter to swell, resulting in soft, fluffy malpuas.
Fry them correctly: For perfect frying, it is essential to keep the oil or ghee at a medium-low heat. Ladle a small portion of the batter into the pan and splash hot oil over the top to puff it up. It is ideal to fry them until the edges are crispy.
Serving technique: Once the malpuas are ready, serve them with some chilled rabdi or a scoop of vanilla ice cream. Make sure the malpuas are garnished generously with finely chopped nuts.
