Make small fried droplets (called boondi). Pour gram flour batter through a perforated ladle into hot oil. Soak the boondi in warm syrup for a short time and shape them into balls while still warm. Add nuts and cardamom.

Boondi laddoo is a naturally eggless dessert made of fried gram flour droplets held together by sugar syrup. This traditional Indian sweet is totally dairy- and egg-free, as no eggs are used anywhere.

Boondi Laddoo is an easy no-oven recipe, as the batter is deep-fried in hot oil on the stove. The syrup is also cooked separately on the stove and then mixed with the fried droplets of boondi.

Boondi Laddoo is made with gram flour, oil for frying, sugar syrup, ghee, and flavorings like cardamom powder. Chopped nuts or raisins are also added to give texture and a little richer, more indulgent bite to each laddoo.

Boondi Laddoo will last for a week to ten days if stored in an airtight container at room temperature. Refrigeration can extend this a little, but the texture may firm up when thoroughly chilled.

If the batter is not even, then this will create either too big or too small boondi droplets that won't bind properly. If the syrup has become too cold when the laddoos are formed, the mixture may break up.

You can control the sweetness, the quality of ghee, and the freshness when you make Boondi Laddoo at home, which often gives a more aromatic and richer taste. The store-bought ones are usually mass-produced.

Add cocoa powder to the batter for chocolate boondi laddoo, use dried fruit like tutti-frutti for a colorful twist, or make mini bite-sized laddoos for parties and festive gift boxes.

You can also add a modern twist to the boondi batter with a light drizzle of milk chocolate or cocoa powder. But this is more of a creative version and not a traditional combination.

For experimenting with chocolate, a good quality, smooth cocoa powder or milk chocolate brand is recommended. But the success of Boondi Laddoo has always been the use of fresh besan and properly tempered syrup and not any particular brand.
