Ingredients:
For the Brownies:
- ¾ cup (170g) unsalted butter
- 200g dark chocolate (60–70%), chopped
- 1 cup (200g) granulated sugar
- ½ cup (100g) light brown sugar
- 3 large eggs, room temp
- 1 tsp vanilla extract
- ¾ cup (95g) all-purpose flour
- ¼ cup (25g) unsweetened cocoa powder
- ½ tsp salt
- 1 cup (100g) toasted walnuts, roughly chopped
For the Caramel Drizzle:
- ½ cup (100g) granulated sugar
- 2 tbsp water
- 3 tbsp unsalted butter
- ¼ cup (60ml) heavy cream
- Pinch of sea salt
Method:

Step 1: Prepare
Start by setting the oven to 350°F (175°C) for preheating. Prepare a 8x8 inch square baking pan with parchment paper. Make sure the edges are also lined well.
Step 2: Melt Chocolate
Set up a double boiler on the stovetop by heating up water in a saucepan until it starts to simmer. Put butter and chopped pieces of chocolate in a heatproof bowl. Make sure the bowl is larger than the opening of the saucepan with the boiling so you can keep the bowl over it. Place the bowl over the saucepan and let the rising steam melt the chocolate and butter. Stir until butter and chocolate are melted smoothly and turned glossy. Alternatively,, you can also melt chocolate in a microwave in 30-second increments while stirring it after every burst. Once melted, let it cook slightly.
Step 3: Make the Brownie Batter
Now, add the granulated sugar and brown sugar to the melted chocolate mixture and mix. Break in the eggs one by one and mix well after each addition. Then, add the vanilla extract and fold in the flour, cocoa powder, and salt. Combine well and stir in toasted walnuts at last.

Heat the saucepan over medium heat until the sugar is completely melted, dissolved, and bubbling.
Cook the water and sugar mixture without stirring until it turns a deep amber color. Keep a close eye on the color as it gets too brown quickly. Once the right color is achieved, remove from heat and whisk in the butter. With the addition of butter, the caramel will foam up. After that, add cream and mix. Stir in a pinch of sea salt for added contrast and let the mixture cool for 10 to 15 minutes.
