Mother’s Day is not far away, and it’s one special day when you can ask your mom to sit back and enjoy while you spoil her. Something sweet and something tasty is always the best way to celebrate a special day. And if that sweet treat is healthy, then there’s nothing like it. Here are some recipes that you can turn to if you want to create something yummy and nutrient-dense.
Chocolate Oat Flour Banana Bread

Ingredients:
- 3 ripe bananas
- 60 g oat flour
- 50 g Cadbury Cocoa Powder
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp vanilla extract
- ¼ tsp salt
- 2 eggs
- 60 ml maple syrup
- 120 g chopped Cadbury Bournville 70% Dark Chocolate
Instructions:
- Preheat the oven to 175 C and grease a loaf tin with some softened butter or else like it with parchment paper.
- Sift oat flour, Cadbury Cocoa Powder, baking soda, baking soda, and salt in a large bowl.
- In another bowl, mash bananas until smooth. Use a fork or do this in a food processor.
- To this, add vanilla extract, maple syrup, and the eggs. Ensure that the mixture is as smooth as possible.
- Then add the flour into the mashed bananas and eggs, and incorporate the chopped Cadbury Bournville 70% Dark Chocolate. You can also add nuts like chopped almonds and walnuts to this loaf.
- Bake in the oven for 40-45 minutes. Let it cool for about 15 to 20 minutes before slicing and serving.
Lemon Poppy Seed Pancakes

Ingredients:
- 240 g oat flour
- 3 tbsp sugar
- 1 tbsp baking powder
- ½ tsp salt
- 355 ml milk
- 2 tbsp oil
- 1 tbsp melted butter
- 30 ml fresh lemon juice
- 1 ½ tbsp poppy seeds
- Zest of a lemon
- 3 egg whites
- Maple syrup, for serving
Instructions:
- First combine all of the dry ingredients in a bowl.
- In another bowl, combine milk, oil, butter, lemon juice, lemon zest, and poppy seeds.
- Add all of the flour into the wet ingredients, and mix well until fully combined. Do not overmix.
- Whip the egg whites until you get airy peaks. Fold them into the flour too. Then let the batter sit for 5 to 10 minutes.
- Cook the pancakes on a skillet or non-stick pan. Serve with pure maple syrup and butter.
- You can also create a glaze by simmering maple syrup, poppy seeds, and lemon juice.
Sugar-Free Cookies

Ingredients:
- 190 g almond flour
- 200 g frozen strawberries
- 30 g flakes almonds
- 50 ml + 1 tbsp maple syrup
- 1 ½ tsp chia seeds
- 1 tsp vanilla extract
- 50 ml oil
- ½ tsp almond extract
Instructions:
- Simmer the strawberries with a tablespoon of maple syrup along with chia seeds. Keep simmering until the fruit becomes mushy and starts releasing its juices.
- Once that’s done, take the fruit off heat and add vanilla extract.
- Let this jam cool while you preheat the oven to 189, and prepare a baking tray with baking paper.
- Then mix oil, almond extract, and 50 ml of maple syrup together, followed by the almond flour and salt.
- Roll out the cookies and then roll every piece in the chopped almonds. Place the cookies on the prepped baking tray.
- Press into the centre of each cookie so there’s space to fill it with the strawberry jam.
- Bake for 16 to 18 minutes until the cookies turn golden brown.
- Let the cookies cool after eating them.
