  • ½ cup whipping cream

Instructions:

Method

Step 1: Make the Crust

Combine crushed Oreo cookies with melted butter. Line a springform pan with parchment paper or grease it with butter and press this cookie mixture into the bottom of the pan. Chill in the fridge for 15 to 20 minutes. Chill it until it firms up.

Step 2: Prepare the Filling

Hull and blend fresh strawberries. Combine strawberry puree with sugar and place in a saucepan. Heat it over medium heat and let simmer for 15 to 20 minutes until it is thickened and reduced.

Now take a large bowl and beat cream cheese in it on high speed until its smooth and creamy. Add heavy whipping cream, vanilla extract and the prepared strawberry puree. Continue beating on high speed until it's light and fluffy. For structure you can add bloomed gelatin or agar agar or skip it. Pour the cheesecake mixture into the chilled crust and refrigerate until it is firm for about 2 to 3 hours.

Step 3: Prepare Chocolate Ganache

Heat heavy cream in a microwave in 20 second intervals until it is hot. Place broken Dairy Milk chocolate in a bowl and pour the heavy cream over it. The heat from cream will melt the chocolate. Stir until smooth. If you still see chocolate chunks, place it in the microwave for 15 seconds and stir well.

Step 4: Pour Ganache on Cheesecake

Pour the prepared chocolate ganache on top of the cheesecake and spread evenly. Return to the fridge and chill for 30 minutes to an hour.

Step 5: Garnish and Serve

Garnish the cheesecake with strawberries and serve. You can also use whipped cream frosting for garnish and sprinkle some seeds and chocolate shards too for an appealing look.

Tips to Elevate It:

Tips To Elevate It
  • Add lemon zest to the filling to balance the sweetness.
  • Use dark chocolate shavings for contrast.
  • To add a crunch, add chopped nuts like almonds and hazelnuts at the base. It will also elevate the flavor of chocolate.
  • Layer halved strawberries in the layers between for a fruity surprise.
  • For a structure, you can add bloomed gelatin or agar agar to the cheesecake filling. Or if you don't want to add these extra steps, you can simply layer the cheesecake in ramekins or trifle jars and then chill it and eat without demolding.
  • The cheesecake will remain fresh for up to 3 to 4 days in the refrigerator so you can enjoy it even the next day. Do not place it in the freezer as the texture will turn grainy.
