For the Recipe
- Mawa (khoya) – as required
- Sugar – to taste
- Cadbury Cocoa powder – 1/2 tsp
- Cardamom powder – ½ tsp
- Edible food colors – saffron (orange), green
- Finely chopped pistachios – for garnish
Directions

Add the mawa to a non-stick pan and heat it gently over a low flame, stirring continuously to prevent burning. Cook until it melts and turns soft, smooth, and pliable.

Once the mawa has melted and become smooth, add sugar to taste.

Mix well and continue to cook until the mixture thickens and reaches a soft, dough-like consistency that's easy to mold.

Add cardamom powder and again give it a quick mix. Remove from heat and allow it to cool slightly, just enough to handle comfortably.

Divide the dough into four portions - three larger ones for the tricolor petals and one smaller portion for the chocolate center.

Add a few drops of edible saffron (orange) color to one of the large portions and mix until the color is evenly blended. Repeat the process with green food coloring for the second large portion. Leave the third large portion plain (white) to maintain contrast.

Take the small portion and mix in cocoa powder until it becomes a rich chocolate brown - this will form the center of your flower.

After mixing in the edible colors and cocoa powder, ensure each portion is well combined. Your four colored Sondesh doughs are now ready for shaping.

Line a chopping board with parchment paper. Roll small balls from each of the three colored doughs (white, green, and orange), and shape smaller balls from the chocolate dough to form the center of each flower.

Place one chocolate ball in the center of the tray. Arrange one ball each of the white, orange, and green doughs around it to create a flower shape.

Gently press the balls together with your fingertip, slightly flattening them to help hold the shapes in place.

Sprinkle finely chopped pistachios over the chocolate ball in the center, enhancing both the flavor and visual appeal.

Allow the assembled sweets to sit at room temperature for 15–20 minutes to firm up before serving. For an extra festive touch, place a blue Gems candy at the center of each flower just before serving. Celebrate Independence Day with these vibrant Tricolor Mawa Sondesh.
