For the Recipe
- Cadbury Gems 1/2 cup (20-25)
- All Purpose flour - 1 cup
- Poppy seeds - 1/2 tablespoon
- Baking powder - 1 teaspoons
- Baking soda - ½ teaspoon
- Salt - ½ teaspoon
- Softened butter - 1/2 cup
- Powdered sugar - 1/2 cup
- Vanilla essence - 1 tsp
- Lemon zest - 1/2 tsp
- Fresh lemon juice - 1 lemon (small)
- Egg - 1
Directions

In a large bowl, whisk together the flour, baking powder, baking soda, salt and poppy seeds.

In a separate bowl, whisk together softened butter and sugar.

Stir in lemon zest, lemon juice, and vanilla essence.

Add egg and mix until well combined.

Add the wet ingredients and mix gently until just combined. Be careful not to over-mix, it's okay if the batter has a few lumps.

Line a 6 cup muffin tin with paper liners.

Spoon the batter into the muffin tin, filling each cup about 2/3 full.

Gently press a few colorful Cadbury Gems on the top of each muffin for a fun and vibrant touch. And bake in a preheated oven at 175°C (350°F) for 12-15 minutes or until a toothpick inserted into the center of a muffin comes out clean or with just a few crumbs attached.

Once baked, let the muffins cool completely in the tin or you can transfer them to a wire rack. And serve these lemony, poppy-seed-filled muffins as a sweet treat.
You can store them in an airtight container for 3-4 days.
