For the Recipe
For the Oreo Crust:
- Oreo cookies (regular) - 15-16
- Melted butter - 2 tsp
For the Cherry Filling:
- Cherries - 1 cup (deseeded)
- Powdered sugar - 1/2 cup
- Almond - 1 tsp (finely chopped)
- Vanilla essence - 1/2 tsp (optional)
For the Cashew Topping:
- Chopped cashews (lightly toasted if desired) - 1/2 cup
- Brown sugar - 2 tsp
- Melted butter - 1 tsp
- Pinch of salt
Directions

Crush Oreos in a food processor (or in a zip lock bag with a rolling pin) until fine crumbs.

Mix the Oreo crumbs with melted butter until fully combined and evenly moistened.

Press the mixture firmly into the bottom and up the sides of a pie dish. Preheat the oven to 350°F (175°C) and bake the crust for 8 minutes. Let it cool completely.

Prepare the cherry filling - In a mixing bowl, whip the cream until soft peaks form. In a blender, puree the cherries with powdered sugar until smooth, then gently fold the puree into the whipped cream.

Stir in chopped almonds or a splash of vanilla extract, mixing until evenly incorporated.

Pour the cherry mixture into the cooled Oreo crust, smoothing the top with a spatula.

Preparing the Cashew topping - In a bowl, mix chopped cashews with brown sugar, melted butter, and a pinch of salt until well combined.

Sprinkle the cashew mixture evenly over the cherry filling. Bake the pie at 350°F (175°C) for 15–20 minutes, or until the topping is golden and slightly bubbly.

Allow the pie to cool completely at room temperature, then refrigerate for at least 1 hour to help the filling set for clean slicing. Serve as is, or garnish with a few extra cherries and an Oreo cookie.
