For a shortcake crust pastry, whisk flour, sugar, and salt in a large bowl. Add butter with your fingertips, and gradually add water. Assemble it in the shape of a dome; it is important not to knead. Roll it out into a pie mold and bake at 190° C for 25 minutes covered, and 15 minutes uncovered.

Choux pastry is a light, airy French pastry dough made from water, butter, flour, and eggs. It relies on high moisture content and steam to puff up dramatically when baked, creating a crisp exterior and a hollow center perfect for fillings.

In a large bowl, whisk flour, sugar, and salt. Rub the butter into the flour and combine them. Add water gradually, using your hands and toss the dough. Refrigerate for 2 hours, take it out, and apply the roll and fold technique 6 times. Brush it with an egg wash and bake at 205° C for about 25-28 minutes.

Baklava is made using phyllo (or filo) pastry. This unleavened dough is rolled into paper-thin sheets. To get that signature flaky, crispy texture, stack dozens of these delicate sheets, brushing melted butter or ghee between the layers and sandwiching them with a filling of crushed nuts.

Shortcrust pastry is a classic, crumbly dough used for the bases of pies, tarts, and quiches. It gets its name and its distinct, crumbly melt-in-the-mouth texture from having a high fat-to-flour ratio, which prevents the development of gluten.

Take milk in a saucepan, add vanilla extract and mix them together. In a separate bowl, stir sugar, cornstarch, salt, and egg yolks together. Combine the milk with the egg mixture and whisk constantly. Cook over medium heat until the cream begins to thicken. Take it off the heat, strain the cream through a sieve, and cool for 30 mins. Refrigerate for 2-3 hours and serve.

Follow the steps to make shortcake pastry, and add pastry cream inside. Top it off with fresh fruits like strawberries, mango, raspberries, kiwi, etc and some whipped cream.

Make a soft chocolate sponge cake, fill it with chocolate cream, and coat with chocolate ganache or chocolate shavings. Chill before serving. Do not put together the pastry when the cake is warm.

Add dark chocolate chips to the puff pastry, roll it up, and fold it. Add egg wash on top and bake at 200° C for 20 minutes. Sieve powdered sugar on top and serve.
