Easy Recipe For Layered Tricolor Sweet

Ingredients (for 8–10 pieces):
Base (for all 3 layers):
- 1.5 cups desiccated coconut
- 1/2 cup cashew powder or almond flour
- 1/3 cup jaggery syrup or blended dates
- 2 tbsp coconut milk or condensed coconut milk
- 1 tbsp coconut oil or ghee
- 1/2 tsp cardamom powder
Natural Colours:
- Saffron soaked in 1 tbsp warm almond milk
- Coconut cream
- 2 tbsp pistachio paste
Method:
Step 1: Make the Base Mixture
Start off by creating the base layer mixture for the sweet. To do this, gently roast coconut and almond flour or cashew flour in a pan for 2 to 3 minutes on low heat. Once it turns golden and fragrant, add jaggery syrup, coconut milk, and coconut oil. You can also use dates paste instead of jaggery for a deeper flavor. Cook it for 4 to 5 minutes until it thickens and starts to leave the sides of the pan. Add cardamom powder and mix it well.
Slide 2: Divide and Color

Once the mixture is prepared, divide it into 3 parts and color it in the tricolor. For saffron, mix saffron milk in one part, for the white layer keep one part as it is, and lastly for green layer blend in pistachio paste.
Step 3: Layer the Barfi
Line a square tray or tin with parchment paper. Press the green pistachio layer at the bottom evenly using a spatula. After that gently press the white coconut layer on top of it. Now finally, add the orange saffron layer on top and smooth it out. Do not press the layers too hard or they will deform and may not form a uniform line.
Step 4: Chill & Cut
Once the layers are stacked up, freeze the barfi for 1 to 2 hours until it turns firm. Firming up helps in keeping the shape of barfi. If you take it out too soon, the layers will start dissolving into each other over time. After freezing, take out the barfi tray and slice it into squares, rectangles, or diamonds. Garnish with silver leaf and pistachios for a more elegant look.
Storage Tips:
Store in an airtight container in the fridge for up to 5 days. These barfis are a frozen dessert so you can easily eat them up to 5 days when you store it in a cool and dry place with no moisture and humidity.
Serving Ideas:
