Method

Step 1: Prepare Cashews

Presoak cashews in water for about 4 hours or overnight. Soaking will make cashews creamier when blended with milk. This will also help it blend smoothly and without leaving and tiny bits of nuts in between Drain them before using.

Step 2: Melt the Chocolate

Chop Bournville dark chocolate into small and even pieces and put it in a heat safe bowl. Set up a double boiler by heating up some water in a saucepan on the stove top. Once it starts to steam, turn off the heat and place the bowl of chocolate over it, away from the water. Let the rising steam settle at the bottom of the bowl, and let the heat melt chocolate. Stir it gently to dissolve the remaining lumps. Set aside.

Step 3: Blend the Base

Take a blending jar and combine soaked cashews, chilled curd or yogurt, sugar, and cardamom powder. Blend it until it becomes creamy and smooth.

Step 4: Add Chocolate and Ice

Now pour in the melted chocolate and add a few ice cubes. Blend it again on high speed until the ice cubes get crushed and turn the lassi thick, frothy, and well mixed. Adjust consistency with more chilled milk. If it feels too thick, add 2 to 4 tablespoons of chilled milk and blend again. The lassi should be drinking consistency but still rich.

Step 5: Serve and Garnish

Pour lassi into tall serving glasses and garnish with chopped cashews and grated Bournville dark chocolate. Serve it chilled.

Tips for Balancing Richness, Sweetness, and Texture in Bournville Cashew Lassi:

Tips For Balancing Richness Sweetness And Texture In Bournville Cashew Lassi

1. Soaked Cashews will make Creamier Lassi

Before blending cashews, it is necessary to soak them when it comes to making creamy desserts like lassi. Presoaked cashews blend like cream and turn smooth in a short time without leaving nutty bits.

2. Don't Overdo the Chocolate

Dark chocolate like Bournville creates a deep flavor but adding too much will make the drink bitter or too much overpowering which can shadow the flavor of cashews. Therefore, add only 50g of chocolate first then add a bit more as you like.

3. Sweetness Adjustment

If you don’t like the bitterness of chocolate but still want a deep flavor, you can adjust it with the addition of sugar to round up the flavor. Add sugar gradually as you blend the lassi and taste it as you blend it.

4. Chill All Ingredients

Using cold ingredients ensures that lassi remains refreshing without the need to add too much ice. Adding ice can eventually make the lassi watered down, ruining its thick texture. Therefore, chill the ingredients beforehand to avoid adding too much ice.

5. Use Thick Curd

Greek yogurt or hung curd works best for a creamy texture. If using regular curd, drain some whey before blending.
