For the Recipe
- 26 pieces Oreo cookies
- ¼ cup melted butter (for base)
- 2 cups whipping cream
- ¾ cup condensed milk
- ½ cup pistachios
- 1 drop of vanilla extract (optional)
Directions

Place the Oreo cookies (with filling) into a blender. Pulse until they become fine crumbs.

Transfer crumbs to a bowl and pour in the melted butter. Mix until it feels like wet sand.

Press the mixture firmly into the bottom of a 7-inch or 8-inch springform pan or mold. Use the back of a spoon to smooth it out. Place the mold in the freezer for 15 minutes while you make the filling

In a large chilled bowl, beat the heavy whipping cream until stiff peaks form.

Gently fold in the condensed milk and vanilla extract (optional).

Fold in half of your chopped pistachios into the cream mixture for a hidden crunch.

Remove the mold from the freezer and pour the cream mixture over the Oreo base.

Generously top the cake with the remaining chopped pistachios. You can also add a few extra Oreo chunks if you're feeling fancy. Cover with plastic wrap and freeze for at least 6 to 8 hours (overnight is best)
Now the Oreo pistachio ice cream cake is ready. Slice it and enjoy.
To get a clean slice, dip your knife in hot water and wipe it dry before cutting into the frozen cake.
