For the Recipe
- 8 pieces Oreo
- ½ cup sugar
- 2 tsp water
- ¼ cup milk
- 1 piece egg
- ½ cup pistachio dust
Directions

Take a heavy bottom pan, add sugar and 2 tsp of water. Let the sugar melt and caramelize.

Once sugar melts and changes color, transfer it to a ramekin. Make sure to do this step immediately after pouring the caramel into the molds; otherwise, the caramel will harden. Let it cool and set in the refrigerator.

Meanwhile, take a blender, pour milk, add Oreo biscuits into the same jar.

Add egg into the same blender. Blend all ingredients and make a smooth mixture.

Pour the mixture into the same ramekin bowl. Caramel pudding should be baked in a water bath or bain-marie method. Bake or steam it for at least 20 minutes. You can fill to the top but leave a bit of space on top so there is no spillage.

Once custard is done, let it cool and refrigerate for at least 3 hours or overnight. Gently remove the pudding from bowl. Garnish with some pistachio dust and enjoy.
Never stir the caramel with a spoon or whisk. Swirl the pan and don't stir.
