Servings
For the Recipe
- Cadbury Cocoa Powder: 2 tbsp
- Besan (Fine Gram Flour): 1 cup
- Water (for batter): 3 / 4 cup
- Ghee or Refined Oil (For deep frying): 2 cups
- Sugar: 1 cup
- Water (for syrup): 1 / 2 cup
- Chopped Nuts: ¼ cup
- Silver leaf: For garnish (Optional): ¼ page
Directions

In a pan, combine the sugar and water. Heat over medium flame until the sugar dissolves completely.

Let it simmer for about 4 to 5 minutes until it reaches a one-string consistency.

In a mixing bowl, whisk the besan and cocoa powder together.

Pour water gradually to form a smooth, lump-free batter with the consistency of pancake batter.

Heat ghee or oil in a deep frying pan over medium-high heat. Hold a perforated spoon (jhara) over the hot oil, pour a ladleful of batter onto it, and let tiny droplets fall into the oil.

Fry the boondi for about 30 to 40 seconds until they turn crisp, but do not let them brown. Remove using a slotted spoon and drain excess oil.

Add the freshly fried warm boondi directly into the warm sugar syrup. Mix well and let it soak for 15 to 20 minutes so it absorbs the sweetness. Allow the mixture to cool slightly until you can comfortably handle it.

Grease your hands with a little ghee or water. Take small portions of the mixture and press them firmly between your palms to shape them into round ladoos.

Let them set at room temperature for an hour. Garnish & enjoy.
Store these chocolate ladoos in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
