For the Recipe
For the Patisapta Batter:- Maida - 1 cup
- Sooji - 1 / 2 cup
- Powdered sugar - ½ cup
- A pinch of salt
- Water - 2-3 tsp
- Mawa / Khoya - 1 / 2 cup
- Cadbury Dairy Milk Silk Chocolate - ½ packet
- Chopped almonds and pistachios - 1 tsp
- Ghee - 1 teaspoon
Directions

Prepare the patisapta batter: In a mixing bowl, combine the maida, sooji, powdered sugar, and a pinch of salt. Mix well until evenly combined.

Gradually add water, a little at a time, whisking continuously to create a smooth, lump-free batter.

The consistency should be light and flowing, similar to dosa batter.

Prepare the filling: Heat a little ghee in a pan and add the crumbled mawa.

Cook gently until the mawa becomes soft, smooth, and tender.

Add the chopped Cadbury Dairy Milk Silk chocolate and stir gently until the chocolate begins to melt into the warm mawa.

Continue cooking over low heat, stirring gently, until the chocolate and mawa come together into a rich, smooth filling.

Add the chopped nuts and mix until everything is beautifully combined.

Remove from the heat and set aside to cool completely to room temperature.

Prepare the patisapta: Heat a flat pan over a low flame and lightly brush it with ghee. Pour a ladleful of batter onto the pan and spread it evenly into a thin, delicate layer.

Cook gently over low to medium heat for about a minute. Place a teaspoonful of the prepared filling along one edge of the patisapta.

Carefully roll or fold the patisapta over the filling, handling it gently to keep the delicate crepe intact without tearing.

Cook for another minute until the patisapta is cooked through. Traditionally, patisapta is kept soft and delicate, with a pale exterior rather than a crisp or browned finish.

Gently remove from the pan and place on a serving plate. Repeat the process with the remaining batter and filling. Arrange the prepared patisapta beautifully on a serving platter and serve warm, allowing the soft crepes, rich mawa, and melted chocolate filling to shine.
For soft, delicate patisapta, keep the batter slightly thin and lump-free and cook each crepe gently over low heat without allowing it to brown. Make sure the mawa-chocolate filling is completely cooled before rolling, so the patisapta stays neat and doesn't tear.
