Servings
For the Recipe
- Cashews - 1 cup
- Powdered sugar - ½ cup
- Toblerone Chocolate - 1 pack
- Water - ¼ cup
- Cardamom powder - ½ tsp
- Ghee - 1 tsp
- Silver vark, optional
- Chopped almonds & Rose petals for garnishing (optional)
Directions

Add the cashew nuts to a grinder jar and pulse until finely powdered. Avoid over-grinding, as this can release the nuts’ natural oils and turn the powder into a paste.

In a non-stick pan, combine the powdered sugar and water. Cook over medium heat, stirring gently, until the sugar has completely dissolved.

Continue cooking until the syrup becomes slightly sticky and reaches the right consistency for the cashew mixture.

Lower the heat and gradually add the powdered cashews, stirring continuously until everything is evenly combined and smooth.

Add ½ teaspoon of ghee and mix well. This helps keep the mixture soft and smooth.

Add the cardamom powder and cook for another 1–2 minutes, stirring continuously.

Be careful not to overcook the mixture, as this can make the Kaju Katli hard. Once it comes together into a smooth dough and begins to leave the sides of the pan, immediately remove it from the heat.

Transfer the warm mixture onto lightly greased butter paper and allow it to cool slightly. Gently spread and flatten it evenly to approximately ¼-inch thickness.

Carefully place silver varq over the surface for a beautiful festive finish. Allow the Kaju Katli to cool and set completely, then cut into neat diamond-shaped pieces.

Crumble the Kaju Katli into a bowl and gently knead until soft and pliable. If the mixture feels too firm, add ½ teaspoon of ghee and knead again until smooth.

Take small portions of the softened Kaju Katli mixture and roll between your palms to form smooth, bite-sized balls.

Arrange the Kaju Katli balls on a lined plate and refrigerate for 15–20 minutes, allowing them to firm up before coating.

Place the chopped Toblerone in a heatproof bowl and microwave for about 1 minute, stirring until completely melted, smooth, and glossy. Add a tiny amount of ghee for extra shine, if desired.

Dip each chilled Kaju Katli ball into the melted chocolate, ensuring it is completely coated. Lift gently with a fork and tap lightly to allow any excess chocolate to drip off. Place the coated bonbons on parchment paper.

While the chocolate is still soft, sprinkle with chopped almonds and, optionally, delicate dried rose petals. Refrigerate for 20–30 minutes, or until the chocolate shell is completely set.

Allow the bonbons to rest at room temperature for a few minutes before serving, allowing the Kaju Katli center to soften into a delicious, melt-in-the-mouth texture. Pack a few into a beautiful decorative box and gift them to loved ones. Celebrate Diwali with these indulgent homemade Kaju Katli Chocolate Bonbons.
