For the Recipe

  • Dairymilk: 4 packets
  • Water: 1.5 cups
  • Ghee: 1 tsp
  • Rice Flour: 1.5 cups
  • Powdered Sugar: To taste 2–3 tbsp
  • Desiccated Coconut: 2 tbsp
  • Cardamom Powder: 1 / 2 tsp
  • Dry Fruits : ¼ cup
  • Full-Fat Milk: 1 liter (~4.2 cups)
  • Saffron (Kesar): 8–10 strands

Directions

Step 1

In a pan, add 1.5 cups of water and bring it to a boil. Add 1 tsp of ghee and 1.5 cups of rice flour.

Mix well on low flame, then cover and set aside to rest

In a bowl, mix in desiccated coconut, powdered sugar, and your choice of chopped dry fruits.

Knead the rested rice flour dough for 5–6 minutes until it is very smooth. This prevents the balls from breaking in the milk.

Take a small portion of dough, flatten it, place a spoonful of the premade stuffing inside, and seal it to form a ball.

In a pan, boil 1 liter of full-fat milk until it reduces to about 3/4 of its original volume

Add 2 tbsp desiccated coconut, 1/4 cup Dairymilk, and saffron strands.

Gently add the pitha balls to the milk. Cook on medium flame for 12–15 minutes. You will know they are done when the balls begin to float to the surface

Tips:

For stuffing can use khoya with powdered sugar also.
