For the Recipe
For the Sabudana Kheer:- Sabudana - 1 / 2 cup
- Full-cream milk - 2 cups
- Sugar - 2 tsp (adjust as per taste)
- Cardamom powder - ½ teaspoon
- Cadbury Oreo Cookies - 5-6
- Strong, Cooled Coffee - ½ cup
- Cheesecream - ½ cup
- Fresh Cream - 2 tsp
- Powdered sugar - 1 tsp (use very little, as the kheer is already sweet)
- Vanilla essence - 1 teaspoon
- Cadbury Oreo Cookies - as required
- Chopped pistachio - as required
Directions

Pour 3 cups of milk into a heavy-bottomed pan and bring it to a gentle boil over medium heat.

Wash ½ cup sabudana 2–3 times, until the water is relatively clear. Soak it in enough water for 2–3 hours, until the pearls become soft and easily press between your fingers. Drain well and add to the hot milk.

Reduce the heat to medium-low and cook for 10–12 minutes, stirring regularly to prevent the sabudana from sticking to the bottom.

Once the sabudana becomes translucent and soft, add the sugar and cardamom powder. Mix well and cook for another 3–4 minutes, until the kheer is lightly thickened.

Sprinkle in the chopped nuts and stir gently to combine, allowing their flavor and crunch to blend into the kheer.

Transfer the kheer to a bowl and allow it to cool completely. For quicker cooling, refrigerate for 20–30 minutes. Do not over-thicken the kheer, as it will naturally become thicker as it cools.

Add the Cadbury Oreo Cookies to a blender and pulse until you have a coarse crumb.

Add a little cooled coffee to the Oreo crumbs and mix gently. The crumbs should be moist and flavourful, but not soggy.

Divide the coffee-soaked Oreo crumbs between two small serving glasses or cups. Gently press them down to form an even base and refrigerate for 10–15 minutes to set.


Add the whipped cream along with some crushed Oreo Cookies. Gently fold everything together, taking care not to overmix.

Whip until the mixture is light and fluffy, then refrigerate for about 10 minutes to allow the cream to firm up slightly.

Spoon a generous layer of the chilled sabudana kheer over the set Oreo base in each serving glass.

Pipe or spoon the cream cheese mixture over the kheer layer. If using taller glasses, repeat the layers for a beautiful layered effect.

Finish with a light sprinkling of finely chopped pistachios, if desired. Refrigerate for at least 30 minutes before serving.

Just before serving, crown each glass with a whole Cadbury Oreo Cookie and enjoy this delicious fusion dessert chilled.
If you're making these for a party, use small 100–120 ml clear cups. The layers look beautiful in cups/glass.
