  • 3 Large Egg Whites
  • ¾ Cup Superfine Sugar
  • ¼ Cup Unsweetened Cocoa Powder

In a clean, grease-free glass or metal bowl, beat the egg whites on medium speed until soft peaks form.

Increase the speed to high. Add the sugar one tablespoon at a time and beat constantly. Continue until the mixture is thick, glossy, and holds stiff peaks.
