For the Recipe
- ¼ cup caster sugar
- 2 tsp Cadbury cocoa powder
- 2 tbsp oil
- 1 / 4 cup mango puree
- 2tbsp milk
- 1 tsp vanilla
- 1 / 2 cup maida
- 1 / 2 tsp baking powder
- 1 / 8 tsp baking soda
- ¼ cup chopped pistachios
Directions

In a mixing bowl, whisk together powdered sugar and oil until pale and well combined.

Next, add the mango puree to this mixture.

Add milk to the same bowl.

Add vanilla essence for extra flavour.

Combine all ingredients nicely until mixed.

Now add the dry ingredients. In the same bowl, sift the flour.

Add baking powder and baking soda.

Add Cadbury cocoa powder for chocolatey richness.

Fold it in gently without overmixing.

Preheat the oven to 180°C and line a 4-inch round springform pan with parchment paper.

Transfer the batter to the prepared cake pan and cover the batter with chopped pistachios.

Bake at 180 °C for 20-25 minutes or only until a skewer inserted in the center comes out clean.
Let the cake cool down and enjoy.
If the mangoes are not ripe enough, add a tiny pinch of citric acid or extra lemon juice to the puree to mimic that natural tropical zing.
