People have a lot to say about traditional fudge, and not all of it is good. The process is so exact that it punishes you for getting distracted. The temperature of the sugar syrup must be in a certain range that closes in a matter of seconds. The beating stage must start at the right time and with the right amount of force to get the right crystal structure without going too far and turning the whole batch into a grainy mass that can't be used.

Ingredients

Servings
For the Recipe
- ½ cup cocoa powder
- 1 can condensed milk
Directions

Pour the sweetened condensed milk into the cocoa powder

Stir with a spatula until the mixture is dark, glossy, and completely smooth. If it feels too stiff to stir, you can microwave the condensed milk for 30 seconds first to loosen it up.

For a better "set," microwave the mixture for 30–45 seconds, then give it one final vigorous stir.

Pour the mixture into your lined pan and smooth the top.

Refrigerate for at least 2 to 3 hours until firm. Dust some cocoa powder all over the fudge

Cut into pieces & enjoy.
Add more nuts if desired to introduce different textures. Toast them in a dry pan, then slice or chop them up to amplify the crunch.
Serve warm with a side of chocolate or vanilla ice cream or even some whipped cream.
