Ingredients:
1 cup besan (gram flour)
⅓ cup ghee
½ cup powdered sugar
½ tsp cardamom powder
Chopped dry fruits for garnish
Method:
Step 1: Roast the Besan
Heat up a heavy bottomed pan on low flame and add some ghee to it. Once ghee is hot and melted, add besan flour into it. Roast the besan slowly in ghee by stirring constantly. Roast until besan turns golden and aromatic. This will take about 10 to 12 minutes and it is the longest and the most crucial step into making besan ladoo. Be patient with besan and the flavor will be immaculate.
Step 2: Cool Slightly
Once the besan is evenly roasted, turn off the heat and let the mixture cool for 4–5 minutes. Cooling the besan down is very important before adding other ingredients. Besan should be warm, not hot.
Step 3: Add Sugar & Cardamom
After the besan is cooled down a little, add in the powdered sugar and cardamom powder. Stir well to combine evenly. It is also good to sift powdered sugar before adding to remove any remaining lumps from it so the texture will be smooth and even. Be careful about the temperature of besan. When you add sugar in hot besan, the sugar will melt and turn into crystals after solidifying. This will result in brittle bites and the ladoos won’t be smooth and even. Make sure to only add sugar after besan is cooled down.
Step 4: Shape Into Ladoos
Take small portions in your hand and roll into smooth balls. If the mixture feels dry, warm it slightly to loosen it. Or instead you can also add some milk or ghee to make it bind well.
