Sugar-Free Oatmeal Raisin Cookies With A Bournville Surprise

Ingredients

1 ½ cups (135g) rolled oats
1 cup (125g) whole wheat flour (or almond flour)
½ tsp baking soda
½ tsp cinnamon
½ tsp salt
½ cup (120ml) melted coconut oil
⅓ cup (80ml) honey or maple syrup
1 large egg (or flax egg: 1 tbsp flaxseed + 3 tbsp water)
¾ cup (100g) raisins
½ cup (75g) chopped Bournville dark chocolate

Make Batter

Whisk melted coconut oil, honey, and egg until smooth. Add oats, flour, baking sida, cinnamon, and salt to it.

Fold in Chocolate

Fold in raisins and chopped Bournville chocolate evenly without overmixing.

Bake the Cookies

Preheat oven to 175°C and line a baking sheet with parchment paper. Scoop the batter onto it and shape cookies. Bake for 10-12 minutes.

Serve

Let cool enough to handle and serve cookies warm with coffee.
