Vegan Banana Rice Pudding Recipe For Conscious Celebrations

Ingredients

1 cup short-grain rice
2 cups coconut milk (or any plant-based milk)
1 cup water
2 ripe bananas (mashed)
¼ cup maple syrup (or any sweetener)
1 teaspoon vanilla extract
Pinch of cinnamon (optional)

Cook The Rice

After rinsing, cook the rice in water until it becomes tender.

Add Ingredients

Cooked rice should be combined with coconut milk, mashed bananas, maple syrup, and vanilla essence.

Keep Stirring

Reduce heat to medium and simmer, stirring periodically, until thick and creamy.

Serve The Pudding

Serve warm or cold, stirring with a bit of cinnamon if preferred.
