250g all-purpose flour
125g unsalted butter, softened
125g brown sugar
1 tsp baking powder
2 tsp ground cinnamon
½ tsp ground nutmeg
¼ tsp ground cloves
¼ tsp ground ginger
A pinch of salt
Put melted butter and brown sugar in a bowl and mix them together until they are light and fluffy. Put in the salt, baking powder, flour, and all the spices. Mix until you get a soft dough.
Refrigerate for at least 1 hour after wrapping the dough in plastic wrap. The flavours will mix, and the dough will get firmer, making it easier to work with.
Preheat your oven to 350°F (180°C). Roll out the chilled dough on a floured surface to about ¼ inch thickness. Use Speculaas molds or cookie cutters to cut out your desired shapes.
