Introduction

Crafted to commemorate the winter solstice, this cake symbolizes the year's shortest day and longest night, typically occurring around December 21st. Embraced for its culinary significance, the winter solstice cake is a delightful creation enjoyed during this celestial celebration.

Ingredients for the Cake

2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar, packed
3 large eggs
1 teaspoon of vanilla extract
1 cup of buttermilk

For the Frosting

1 cup unsalted butter, softened
4 cups of powdered sugar
1 teaspoon of vanilla extract
2–3 tablespoons of milk

Preheat

Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Make Dry Mix

Whisk the dry ingredients (flour, baking powder, baking soda, salt, and spices) in a bowl. Place aside.

Cream Butter and Sugar

Cream together the softened butter and sugar in a bowl.

Add Eggs

Add eggs one at a time, then mix in vanilla. Alternately, add dry ingredients and buttermilk to the wet ingredients. Mix until everything is just blended.

Bake

Divide the batter between the pans, and bake for 25–30 minutes until a toothpick inserted into the center comes out clean, then cool for 10 minutes before transferring to the wire racks.

Frost Cake

Mix the frosting ingredients until smooth. Frost cooled cakes, layer them, and decorate as desired with winter-themed embellishments like snowflakes, edible glitter, or festive berries.
