Thapeswaram Madatha Kaja Recipe: How To Make This Layered Andhra Sweet

Ingredients

2 cups (250g) Maida
1/4 cup (60g) Ghee
1/4 tsp Baking soda
1.5 cups (300g) Sugar
3/4 cup (180ml) Water
1/2 tsp Cardamom powder
Oil for deep frying

Make Dough

Mix maida, baking soda and ghee and knead it to a firm dough. Cover and let rest.

Make Sugar Syrup

Combine sugar and water in a pan and heat until sugar dissolves and syrup becomes thick. Add cardamom powder.

Shape Kaja

Turn the dough to a sheet and layer with ghee then roll it up. Cut the pieces and flatten gently.

Deep Fry

Fry the prepared kaja into hot oil until crispy and golden. Once fried, put it into sugar syrup and let soak for 5 minutes. Take it out and serve.
