8 cups popped popcorn
½ cup unsalted butter
1 cup brown sugar
¼ cup light corn syrup
½ tsp baking soda
1 tsp vanilla extract
1 tsp sea salt
¾ cup chocolate (milk, dark, or white chocolate chips)
Spread popped popcorn on lined baking sheet and sprinkle sea salt over it.
Melt butter in a saucepan and add brown sugar and corn syrup. Once sugar is melted, bring mixture to a boil and simmer for a few minutes.
Remove mixture from heat and add baking soda, vanilla, and remaining salt.
Pour hot caramel sauce over popcorn. Toss to coat popcorn evenly. Let it cool.
Drizzle melted chocolate on caramel popcorn. Add more toppings like nuts and crushed pretzels. Let it set in the fridge and break into clusters to serve.
