1 ¼ cups all-purpose flour
½ cup unsalted butter, cold and cubed
1 tbsp sugar
¼ tsp salt
3-4 tbsp ice water
3 ripe pears, thinly sliced
¼ cup brown sugar
1 tbsp cornstarch
1 tsp cinnamon
½ tsp nutmeg
1 tsp vanilla extract
1 tbsp lemon juice
Mix flour, sugar, and salt. Add cold butter and mix into flour until it becomes coarse. Add ice water gradually and mix to make dough. Flatten and wrap it with plastic. Chill for 30 minutes.
Combine sugar, cornstarch, cinnamon, nutmeg, vanilla, and lemon juice in a bowl and toss pear slices in it. Rest for 10 minutes.
Preheat oven to 190°C. Roll out chilled dough into 12-inch circle. Transfer it to a lined baking sheet. Arrange pears and fold edged over pears.
Brush galette with egg wash and sprinkle sugar. Bake for 35-40 minutes. Once baked, let cool and serve with ice cream.
