1 cup (240g) whipped heavy cream
115g cream cheese
1/4 cup (50g) granulated sugar
1/4 cup (60ml) fresh lime juice
1 tablespoon lime zest
1/2 teaspoon vanilla extract
Graham crackers
Beat softened cream cheese until smooth. Add sugar, lime juice, lime zest, and vanilla extract. Mix well.
Fold in whipped heavy cream into lime-cheese mixture. Do not deflate while mixing.
Spoon mousse into serving glasses. Top with crushed crackers and garnish with lime zest. Serve chilled.
