1 cup graham cracker crumbs
2 tbsp melted butter (or coconut oil)
8 oz cream cheese
¼ cup powdered sugar
1 tsp vanilla extract
½ cup heavy cream
Mix graham cracker crumb with melted butter and sugar and press it into cupcake liners. Chill crust to set.
Beat softened cream cheese, powdered sugar, and vanilla until smooth.
Whip heavy cream until stiff peaks form. Combine whipped cream with cream cheese mixture.
Spoon cheesecake filling into chilled crusts and smoothen out the tops. Chill for 3-4 hours and serve with your favorite garnish.
