Lemon Poppy Seed Muffins With Gems Topping: A Zesty, Colorful Treat

Ingredients

1½ cups all-purpose flour ¾ cup granulated sugar 2 tbsp poppy seeds 1 tsp baking powder ½ tsp baking soda ½ tsp salt 2 large eggs ½ cup plain yogurt or sour cream ¼ cup melted butter Zest of 1 large lemon + 3 tbsp fresh lemon juice 1 tsp vanilla extract ¼ cup crushed colorful candy gems

Prepare

Set the oven to 175°C and line a muffin tin with paper liners.

Mix Dry Ingredients

Combine flour, sugar, poppy seeds, baking powder, baking soda, and salt.

Mix Wet Ingredients

Whisk together eggs, yogurt, melted butter, lemon zest, lemon juice, and vanilla until smoothly blended.

Combine and Fill

Fold the wet and dry ingredients together until combined. Fill into muffin tins.

Add Topping and Bake

Sprinkle crushed Cadbury Gems all over the muffins and bake for 18–22 minutes. Let cool and serve with hot chocolate.
