How to Perfect Your Jalebi Recipe For Diwali

Ingredients

1 cup all-purpose flour
2 tbsp cornflour
1/2 cup yogurt
1/4 tsp turmeric
1 tsp ghee
Water as required
1 cup sugar
1/4 tsp cardamom powder
1/2 tsp lemon juice

Make batter

Mix flour, cornflour, yogurt, and turmeric in a bowl. Add water to make thick and smooth batter.

Ferment Batter

Cover the batter and ferment for 8-10 hours or overnight in a warm place.

Make Sugar Syrup

Heat water and sugar until sugar dissolves and add cardamom powder. Let it simmer to thicken.

Prepare for Frying

Heat oil in a pan and pipe jalebis into the oil in spiral shapes. Make sure oil is moderately hot, not too hot.

Dip in Sugar Syrup

Once jalebis are fried, immediately dip into sugar syrup and let soak for 30 to 60 minutes. Keep sugar syrup on low flame.

Serve

Drain the excess syrup and serve warm and crispy jalebis.
