1 cup heavy cream
1/2 cup cream cheese, softened
1/4 cup powdered sugar
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/4 cup finely grated carrots
1/4 cup crushed walnuts or pecans
Whip heavy cream in a bowl until fluffy. Take another bowl and mix softened cream cheese with powdered sugar. Add cinnamon and vanilla and mix.
Add grated carrots to cream cheese mixture and mix well. Add extra cinnamon for added flavor.
Fold the whipped cream in the cream cheese mixture with a spatula.
Spoon mousse into serving dishes, chill for 2 hours and serve with preferred garnishes.
