100g (1/2 cup) granulated sugar
2 tbsp water
3 large eggs
500ml (2 cups) whole milk
100g (1/2 cup) granulated sugar
1 tsp vanilla extract
Combine sugar and water in a saucepan and heat on medium heat. Allow sugar to dissolve and let mixture become golden brown. Pour prepared caramel in ramekins.
Heat milk in a saucepan until steaming. Whisk eggs and sugar in a bowl then gradually pour in heated milk while whisking constantly.
Stir in vanilla extract for flavor. Strain mixture through a sieve to make it lump-free.
Fill ramekins with the mixture halfway and put ramekins in water bath. Bake at 160°C for 35-40 minutes.
Remove ramekins from water bath. Refrigerate and serve chilled.
