How To Make Mini Berry Cakes For A Stunning Dessert Display

Ingredients

1½ cups all-purpose flour
1½ tsp baking powder
½ cup unsalted butter
¾ cup granulated sugar
2 large eggs
½ tsp vanilla extract
½ cup milk
1 cup fresh mixed berries
1 cup heavy whipping cream
¼ cup powdered sugar

Prepare

Preheat the oven and greased muffin tins with large molds.

Make Dry and Wet Mix

Whisk baking powder and flour in a bowl. Cream sugar and butter then add eggs and vanilla.

Make Batter

Add dry ingredients and milk to the wet mixture alternatively and spoon it into greased molds. Bake for 18 minutes.

Prepare Whipped Cream

Beat whipping cream and powdered sugar until you see stiff peaks.

Assemble

Slice mini cakes in half and spread whipped cream on one half, add berries and place the top half.

Decorate and Serve

Frost the mini cakes with whipped cream and berries. Serve it chilled.
