½ cup basmati rice (washed & soaked)
1 liter whole milk
½ cup grated jaggery (adjust to taste)
¼ tsp cardamom powder
1 tbsp ghee (or coconut oil for vegan)
5–6 chopped cashews
5–6 raisins
4–6 crushed Oreo cookies
A pinch of saffron
Cook soaked rice with milk on low flame until the mixture gets soft, creamy, and thick.
Once rice is cooked, turn off the heat. Add grated jaggery while mixture is still warm and stir to mix jaggery well.
Stir in cardamom powder and saffron. Add spices of choice.
Take a small pan and heat ghee. Roast cashews, raisins, and other dry fruits in it until fragrant. Add it to kheer.
Crush Oreo cookies and sprinkle over the kheer. You can also layer kheer with Oreo crumbs to make parfait. Enjoy warm or chilled.
