400 ml full-fat coconut milk
3 tbsp sugar (adjust to taste)
2 tbsp cornstarch
1/2 tsp vanilla extract (optional)
Heat the coconut milk and sugar in a saucepan over medium heat, stirring until the sugar melts.
Make a slurry out of cornstarch and a little amount of cold water in a small bowl, then stir it into the coconut milk mixture.
Stir continuously for 5 to 7 minutes, or until the pudding thickens. After taking off the heat, mix in the vanilla essence.
Transfer to serving glasses, allow it cool slightly, and then chill for at least 15 minutes to solidify.
