Fruity Deep-Dish Pie: A Sweet And Juicy Dessert With A Buttery Crust

Ingredients

2 ½ cups all-purpose flour
1 cup unsalted butter, cold & cubed
¼ cup granulated sugar
6 tbsp ice-cold water
5 cups mixed fresh fruit
¾ cup granulated sugar
¼ cup cornstarch
1 tbsp lemon juice
1 egg yolk + 1 tbsp milk
1 tbsp coarse sugar

Prepare Crust

Mix flour and sugar, add cold butter and mix until coarse. Gradually add ice water and mix until dough forms. Divide dough into two discs and chill for 30 minutes.

Make Filling

Combine fruit, sugar, cornstarch, and lemon juice. Toss and let sit for 10 minutes.

Assemble

Preheat oven to 190°C. Roll out dough disc and fit into deep-dish pie pan. Pour in filling and cover with second dough disc, sealing the edges.

Bake

Brush the crust with egg yolk and milk mixture and sprinkle coarse sugar. Bake for 50-60 minutes. Once baked, let cool and slice to serve.
