1 cup rice flour
¼ cup jaggery
½ cup water
½ tsp cardamom powder
¼ tsp baking powder
¼ cup coconut milk
1 tbsp ghee
Pinch of salt
Dissolve jaggery in water on low heat and stir. Once jaggery is dissolved, set the mixture aside to cool.
Combine rice flour, cardamom powder, baking powder, and salt in a bowl.
Pour cooled jaggery syrup and coconut milk into dry ingredients and mix well. Adjust consistency with water.
Heat a non-stick pan and brush some ghee. Pour a ladleful of batter into the pan and spread to make a round shape. Flip and cook on both sides until golden brown.
Drizzle honey or jaggery syrup and serve warm.
