15 Ladyfingers
2 cups hot water
2-3 tbsp Cadbury cocoa powder (for dissolving)
2 tbsp Cadbury cocoa powder (for dusting)
2 tbsp sugar
2.5 cups mascarpone cheese
1 cup heavy whipping cream
1/3 cup granulated sugar
1 tsp vanilla extract
2-3 tbsp coffee liqueur
In a large bowl, beat cream cheese, butter, and vanilla. Add sugar in batches and beat well until a stiff dough is formed.
Divide the dough into 2 bowls. Mix the peanut butter into one bowl and the flaked coconut into the other until incorporated.
Mold the dough into egg shapes and place them on cookie sheets. Freeze them for 1 to 2 hours.
Melt the chocolate chips and shortening using a double boiler until smooth. Allow them to cool slightly.
Dip the frozen eggs into the melted chocolate mixture until completely coated and refrigerate them again to harden before serving.
