½ cups pumpkin purée
½ cup jaggery or honey
1 cup milk
2 tbsp cornstarch (or 2 tbsp custard powder)
½ tsp cinnamon powder
¼ tsp nutmeg powder
½ tsp cardamom powder
¼ cup chopped nuts (almonds, cashews, walnuts)
Preheat oven to 180°C. Grease a baking dish with ghee.
Whisk pumpkin puree, jaggery, milk, cornstarch, and spices. Add vanilla extract and a pinch of salt for enhanced flavor.
Pour the mixture into greased baking dish and add chopped nuts on top. Bake for 30-35 minutes until pudding is set.
Let the pudding cool slightly and serve with preferred garnishes.
