If there's one dessert to describe Hariyali Teej, then it would undoubtedly be Ghewar. This sweet is a popular Rajasthani specialty and is found in every home and shop during festivals, especially Hariyali Teej. Here's a classic recipe for the dessert.

1.Ingredients

1 cup all-purpose flour
1/4 cup ghee
1 cup milk
2 cups water
1/2 cup sugar
1/4 cup milk (for sugar syrup)
1/2 tsp cardamom powder
Saffron strands
Chopped nuts (for garnish)
Ghee (for frying)

2.Batter Preparation

Blend milk, ghee, and flour until smooth. Add water gradually to create a thin batter.

3.Fry The Ghewar

In a large pan, heat the ghee. To make a disk, pour the batter in a narrow stream. Fry till the color turns golden brown. Take out and empty.

4.Make Sugar Syrup

Bring milk, sugar, and water to a boil until the mixture resembles a single thread. Add the saffron and cardamom.

5.Assemble Ghewar

Fry ghewar and dunk it in heated sugar syrup. Serve with a nut garnish.
