Ghee roast the besan in a heavy-bottomed pan. Start by adding some ghee in the pan and let it melt on a medium flame. Add besan flour and stir it continuously on medium flame. Let it roast for about 12 to 15 minutes until it gives off a nutty aroma and becomes golden in shade. Roasting will take some time and require patience, but this is the most important step that will determine the whole flavor of besan ladoo. When you rush this step by increasing the flame, besan will get over-roasted and taste bitter.
